Minestrone Soup
A healthy and hearty soup.

Ingredients - Serves 4-6
1 LifeFibre Co. Variety Roll
75g Shortcut Maccaroni or other pasta of your choice
25g Butter

tablespoon of Olive Oil
50g Streaky Bacon
1 medium Onion, finely chopped
2 Celery sticks, finely chopped
175g Carrots, finely chopped
2 tins of Tomatoes, chopped
1 clove of Garlic, crushed
1.5 litres of vegetable stock
1.5 tablespoons of Basil
225g of leeks, chopped
175g of cabbage, chopped
1
level dessert spoon of tomato puree
2 tablespoons of chopped parsley
Salt and pepper |
To serve:
Heat up the butter and oil in a large saucepan, then add the bacon and cook this for a minute or two before adding the onion, followed by the celery and carrots and then the tomatoes. Now stir in the crushed garlic and season with salt and pepper, then cover and cook very gently for 20 minutes or so to allow the vegetables to sweat.
Then pour in the stock along with the basil. Bring to the boil and simmer gently (covered) for 1 hour. After that add the leeks, cabbage and maccaroni and cook for a further 30 minutes.
Finally stir in the tomato purée, cook for another 10 minutes and, just before serving, stir in the parsley and sprinkle with Parmesan cheese.
